Jelpo Gelling Agent is a powder mixture used for filling, coating or decoration purposes in cakes preventing water release.
Recipe No. 1:
• 100g Jelpo Gelling Agent
• 200-250 g of Sugar (the amount can be adjusted according to the desired sweetness ratio)
• 1lt water or fruit juice
• One of the Katsan Ovalette “Bakery Mix” selections is cooked at a ratio between 4-8% by stirring over low heat until boil.
After cooling, it is used as filling, coating or decoration in cakes.
Recipe No.2:
• Jelpo Gelling Agent powder between 150-200g according to the desired consistency
• Fruit concentrate with 2,4 kg of fruit and 2,1 kg of fruit juice or 4,5 kg of juice
All the ingredients are mixed and cooked on low heat until boil and then left to cool down. Applied on the cake upon achievement of a spreadable consistency. It is used as filling, coating or decoration incakes.
Recipe No.3:
• 100g Jelpo Gelling Agent
• 1kg fruit puree
Jelpo Gelling Agent powder and the fruit puree are mixed together at room temperature (18-20°C) and used for filling, coating or decoration purposes in cakes and cupcakes.
